Bibimbap

Watch Susan Gins Cook Bibimbap

* Makes 5 servings

Ingredients:

1 cup jasmine brown rice
½ tsp salt
1 avocado sliced
2 Tbs. olive oil
1 bunch kale or spinach
1 bell pepper, seeded and cut in slices
1 clove garlic, minced
4 large eggs
1 Tbsp soy sauce
Sriracha chili sauce to taste (optional)

Directions:

  1. Put rice in medium saucepan and 2 cups water and bring to a boil. Lower heat to simmer and cook until water is absorbed, about 20 minutes.
  2. Heat olive oil in large frying pan at medium heat and add kale, bell pepper and garlic with salt until kale is wilted about 3-5 minutes
  3. Divide rice into four bowls and top with veggies and avocado. Drizzle soy sauce lightly over bowls
  4. Add more olive oil to same pan and fry eggs in the way you like them. Sprinkle Sriracha to taste.
