Gazpacho Recipe

Gazpacho is a soup made of raw vegetables and served cold, usually with a tomato base, originating in the southern Spanish region of Andalusia. It is fresh, crisp and can be creamy, if you choose. Use this as a side dish or main dish.


*Makes 8 cups

Ingredients:

1 32 oz. bottle or can of tomato juice
1 bottle Italian salad dressing
1 diced peeled cucumber
1 can sliced black olives
I diced yellow or orange pepper
3 diced inner celery stalks with leaves
Salt and pepper to taste

Optional:

Sriracha sauce to taste
Sour cream dollop on top
Sliced avocado on top

Directions:

  1. Pour tomato juice into a large bowl.
  2. Add the rest of the ingredients
  3. Mix together. Chill.
  4. Top with optional ingredients if desired.
